Friday's Weekend Recipe
Here is a recipe to try over the weekend. My sister was kind enough to share the basic family spaghetti sauce with us. Remember, the secret to good sauce is tomato paste, something Protestants aren't used to buying. And oregano of course.
What my sister doesn't know is that when she is not looking, I sneak into the kitchen and layer the surface of the sauce with oregano. It cooks and disappears down into the pot.
Tomato Sauce
1 tablespoon of olive oil
1 garlic clove, finely chopped
6 oz. can of tomato paste
28 oz. can of crushed tomatoes
1/2 teaspoon crushed red pepper
1 tablespoon dried oregano
1/2 tablespoon dried basil
1/2 teaspoon dried marjoram
salt and pepper to taste
splash of red wine (optional)
Instructions:
In a medium sauce pan, heat garlic in olive oil, add paste, then fill paste can with water, add to pot. Bring to a boil on low heat.
Add crushed tomatoes and the rest of the ingredients. Bring back to a boil, then lower heat to a simmer. Put lid on slightly ajar, let simmer until ready to serve.

All measurements are approximate. I do it by sight. Use your judgement.
